Coeur a la Crème with Raspberries

Recipe appears courtesy of Classic Cookware (Your Local Everything Kitchen Store)
This is really easy to make and can be prepared days before a party. Helpful hint: If you double this recipe, it won’t set. For a large group, make two molds.
12 ounces cream cheese, at room temperature
1 1/4 cups confectioners’ sugar
2 ½ cups cold heavy cream
2 teaspoons pure vanilla extract
1/4 teaspoon grated lemon zest
Seeds scraped from 1 vanilla bean
Raspberry Sauce (recipe follws)
