As I sit down to write this article I find that I’m still a bit fuzzy headed from jet lag upon return from our summer vacation. We splurged on a family trip to Europe in an attempt to have one last chance to travel with our youngest daughter before high school life gets too complicated. Late last summer, my friend and local artist Deb Moseman and I stood in a quiet little junk filled side yard of her family owned and operated welding shop and saw more. Fueled by Deb’s raw artistic expression and a small army of espresso sipping volunteers, Cafe Grotto at Moseman’s Metalwerks was born. What began as an art garden devoted to whimsical and rusty art became shopping for the right espresso machine and now serving locally grown ‘soul’ food to live radio audiences.

3 pounds fillet of beef, trimmed of fat and tied and a meat thermometer
2 quarts of beef stock
2 cups red wine
2 tablespoons gelatin, optional sea salt
This is an elegant party dish. The sauce may be prepared in advance and reheated. The beef should be at room temperature. Insert the thermometer and place the meat on a rack in a baking pan.
